Fried Peanut Butter and Banana Sandwich
2 large bananas
6 slices white bread
1 stick (1/2 cup) butter
1 cup peanut butter
Peel and mash bananas. Mix peanut butter with bananas thoroughly. Toast bread lightly and spread mix on bread. Melt butter in skillet and brown sandwiches on each side slowly until golden brown.

Terrific South-meets-North story: Was in NYC for a convention of other foodies…and had enough of the fancy foods served to us. Wanted Southern comfort food, so went to the corner deli/sandwich shop near Rockefeller Center. Saw bananas, bread and sandwich makings: asked the guy to make for me a banana sandwich. (Wheat bread — some nod to healthfulness - mayo and the banana.) The whole place seemed to stop in fascination. Yes, I’m from the South. The guy behind the counter started making it, then stalled when it came time to slice the banana, looking up at me. “Rounds,” I directed. He quickly dispatched the banana onto the bread, neatly cut it in half so there were no points to lose the banana from, and then figured out the price by charging me for 2 slices of bread, and 1 banana. $1.25 back in the day.
A few years later, they put in a “real” cafeteria at The Post, and I had to go through the same exact ritual with the cook from Brooklyn behind the sandwich counter. And was charged exactly the same way…2 slices bread, 1 banana. $1.95.
They never did get pimento cheese on the menu - but that’s another story.
