Crackling “Sausage” Cornbread

Crackling “Sausage” Cornbread
1 pound sausage
2 cups self-rising cornmeal
1 cup buttermilk
1 egg
Preheat oven to 400 degrees.
Cook sausage until no longer pink. Drain well.
Combine sausage with remaining ingredients. Spoon into muffin tins.
Bake for 20 to 25 minutes.
Yield: 12 muffins
